Dextran is an homo-exo-polymer of glucose (HoPS), naturally produced through fermentation by food-grade Lactic Acid Bacteria. Long-chain, low-branched, high-molecular-weight polymer that dissolve or disperse in water to give improved rheological (gelling, thickening) or physic-chemical (emulsion stabilization, particle suspension, etc.) properties, are important tools for food product formulation. Clean-label product formulation (impact on food choise). Hydrocolloid. Tasteless. Fat replacer (or reductor), gelling agent, stabilizer, emulsifier. It helps to improve product’s texture, rheological, chemical and sensory properties. Optimal water-binding capacity.
